Work-night dinners are all about easy. This recipe for Asian Meatballs is just that. You can come home, get a little rice cooking, pull the rest of the ingredients together and have a great meal in half an hour. Badabing!!!
*I should mention that ground pork or even a beef/pork blend would probably be way better for this recipe, however, beef is what I had on hand, and I have a strict no-grocery-shopping-on-weekdays policy. My evenings are too short with too much to do as it is. 😉
